Yeah, I know coffee cauliflower smoothie sounds both weird and disgusting but bear with me. First, you don’t taste the cauliflower. Really. You still get all the benefits but you can’t taste it. Second, with the cauliflower gone this essentially tastes like a coffee milkshake. Add in some chocolate protein powder and it gets even better.
Typically, I’ll have a final cup or half a cup of coffee in the early afternoon. Both for a pick-me-up jolt to get past the mid-afternoon energy lull and to use up the inevitable last bit of morning coffee still in the pot.
This coffee cauliflower smoothie checks all the boxes and keeps me humming along until dinner without the craving for a further afternoon snack. [If smoothies aren’t your idea of a snack, try some of these other ideas.]
The recipe calls for 3/4 of a cup of coffee which amazingly is almost always the amount I have leftover and with the addition of milk, nut butter, frozen banana, and dates, it tastes way better than stale, morning coffee.
Why mess up a good smoothie with cauliflower? Because cauliflower is a nutrient powerhouse. Along with fiber, B-vitamins, antioxidants and phytonutrients to battle inflammation and disease, it also includes choline that is essential for learning and memory. Just want I need (along with caffeine) in the afternoon.
